Most Holy Name of Mary Cake


Looks familiar, huh? Except on the inside. When I asked the girl celebrating her nameday today if she wanted another Jell-O poke cake she said, "I didn't really like it very much, but it was pretty!" She thinks this one is pretty too! It has a layer of blueberry preserves in the middle and white buttercream frosting. I wanted to make some white chocolate cream cheese frosting but didn't have white chocolate. Or cream cheese. Can you tell it's time to restock the pantry? The cake is a recipe adapted from the Cake Mix Doctor:

Bride's Cake

1 white cake mix
3 Tbl. half and half plus enough 1% milk to equal 1 C.
1 stick butter, melted
3 large eggs
2 tsp. pure vanilla extract

Mix on low for 60 seconds. Mix at medium speed for two minutes. Bake according to cake mix package directions.

    I wish my kids liked blueberries because I would love to do more with them. I did put a layer of blueberry preserves in the middle of the cake. I figured they could eat around that if they didn't like it! Can't wait to see your Blueberry Cream Pie!
