GF Raspberry Mousse Brownie

This was sooooooo good! Don't skip the fresh raspberries! They really add more than just decoration.  You can find the recipe here. I used a different recipe for the brownies because I couldn't find any Betty Crocker GF mixes. You could use regular brownies if there is no need to eat GF in your house. 
Why, yes, those are white chocolate chip stuffed raspberries on top!  
I also made a batch of Peanut Butter Truffle Brownies since my kids are not big raspberry fans and I wasn't sure how this recipe would turn out since I'd never made it before. The GF Birthday Man was very happy! He didn't mind getting to choose one of each. Didn't mind one bit.

  1. Wow, Charlotte, that looks absolutely amazing! YUM!!! We are all loving raspberries around here right now... just wish they weren't SO expensive in our area. A pint doesn't go very far around here! ;) I would have never thought to stuff them with white chocolate though. So glad that Sean had a happy birthday! (How could he not with such a wonderful family!)

    1. They are expensive but one pint was just enough to give everyone a few on top of their slice of brownie and leave a few leftover for Sean today. I also filled some of them with the leftover chocolate drizzle. Yum!

    2. There is a U-pick farm about an hour and a half north of us that I have been thinking of taking the kids to... They have Raspberries, Marionberries, Blackberries and Boysenberries right now for just 1.25 a pound. It would probably be worth the drive!

    3. Charlotte, looks so amazing. Sweets are killing me lately and just when I thought I was going to be good. you always make them look so pretty.
      Jessica, so worth the drive. we do berry picking every season and the kids look forward to it so much. it's so easy to freeze them in a way to use them all year too. with your crew you'll barely have to lift a finger at the farm. That's a great price per pound too.
